Unleashing Summer Flavors: The Irresistible Fig Salad

If you’ve read my book Eat Beautiful, you probably already know that my beauty philosophy revolves around taking care of your skin from the inside out by eating a diet rich in fresh, seasonal, and healthy foods. But just because we’re talking about healthy eating, doesn’t mean it has to be dull or tasteless. That’s why I enjoy shining a spotlight on the most nutritious and delicious foods of the season, so you can keep your meals exciting and nourishing all year round.

Summer is the perfect time to introduce figs into your diet. These little fruits are packed with fiber, which not only helps to cleanse your system efficiently but also aids in detoxifying your skin. This makes them an excellent choice for those dealing with skin conditions like psoriasis or acne. On top of that, figs bring a natural sweetness to your dishes, offering a healthier alternative to processed sugars that can harm your skin.

Intrigued? Why not try out my mouthwatering fig salad recipe? It’s a fantastic option for light lunches, picnics, or garden parties. Here’s what you need for a serving of two, with each serving totaling 230 calories:

  • 100g of burrata or buffalo mozzarella
  • 2 fresh figs, quartered
  • 2 large handfuls of rocket
  • 1 tbsp of extra-virgin olive oil
  • 1 tbsp of balsamic vinegar
  • Fresh basil for garnish

Simply break the burrata or mozzarella into bite-sized pieces, combine them with the figs in a bowl, and then add the rocket, ensuring everything is mixed evenly. Just before serving, drizzle the olive oil and balsamic vinegar over the salad in a zigzag pattern and sprinkle some basil leaves on top.

Give this recipe a try and enjoy the detoxifying and skin-loving benefits of figs in a delicious and nutritious way!
